I'm a plant-based diet person, who is able and willing to make healthy choices without labeling myself at the moment with any one specific diet title. I support A Vegan diet which is sometimes raw and sometimes cooked based on my needs at the moment and that's okay. Life is too short for me to get into a much smaller category than that at this moment. I just want to encourage others to be the best they can be on a whole foods plant based diet as well! It seems like every time i turn around I'm faced with meat and fat in some form of food, but it has become so easy and fun to turn those traditional dishes into something that is vegan, healthy and yet still so tasty! I realize afterall that it was the natural produce flavors that have always shone the best in those recipes all along :)

There are many different varieties of edible flowers that you may want to try in your next recipe. Check out the book from Cathy Wilkinson Barash "Edible Flowers From Garden To Palate" to find out more about edible varieties. I tried a marigold today that probably wasn't a good choice for my palate but I don't give up that easily and so I'll try another type.

Vegan southwest Calabasitas :
Serves 6 or two very hungry people!
3 small zucchini
3 yellow squash
1 small purple onion
2 ears of corn
1-2 tomatoes (depending on preference)
1 can black beans (rinsed and drained)
1/4 cup vegan mozzarella shreds ( or pepper jack shreds)
1/4 cup Vegan Cheddar shreds (Daiya preferred)
1 tsp garlic powder
2 tsp salt free all purpose seasoning
1/2 tsp Cumin powder
Vegetable stock (for sautéing)

Chop onions and sauté or medium heat in veggie stock for about 10 minutes or until tender. Add chopped zucchini, squash, corn, tomatoes , spices and black beans and stir to combine. Cover and leave on medium high heat for about 7-10 minutes to steam. Uncover, lower heat to low, add "cheeses" and cover for two more minutes. Serve with rice and garnish with avocado and fresh cilantro for more flavor. Salt to taste if you prefer. Enjoy!
