It can be tough to get the recommended amount of vegan protein in a daily diet, but hopefully these 4 tips will help and get you thinking about other ways to incorporate more into your healthy lifestyle.

Having technical issues but did the challenge and it was fun :) calling on three more people to complete the challenge!

It seems like every time i turn around I'm faced with meat and fat in some form of food, but it has become so easy and fun to turn those traditional dishes into something that is vegan, healthy and yet still so tasty! I realize afterall that it was the natural produce flavors that have always shone the best in those recipes all along :)

Vegan southwest Calabasitas :
Serves 6 or two very hungry people!
3 small zucchini
3 yellow squash
1 small purple onion
2 ears of corn
1-2 tomatoes (depending on preference)
1 can black beans (rinsed and drained)
1/4 cup vegan mozzarella shreds ( or pepper jack shreds)
1/4 cup Vegan Cheddar shreds (Daiya preferred)
1 tsp garlic powder
2 tsp salt free all purpose seasoning
1/2 tsp Cumin powder
Vegetable stock (for sautéing)

Chop onions and sauté or medium heat in veggie stock for about 10 minutes or until tender. Add chopped zucchini, squash, corn, tomatoes , spices and black beans and stir to combine. Cover and leave on medium high heat for about 7-10 minutes to steam. Uncover, lower heat to low, add "cheeses" and cover for two more minutes. Serve with rice and garnish with avocado and fresh cilantro for more flavor. Salt to taste if you prefer. Enjoy!
